- 12 medium-sized tomatillos
- 1 large red onion
- 3 cloves of garlic
- 50 g of cilantro leaves, chopped
- 2 medium-sized Serrano peppers
- 1 tsp Himalayan Pink Salt
- 2 tbsp of olive oil
How To Cook
1. Remove the paper-like skin of the tomatillos by putting them in boiling water for about 5 minutes or until they can be easily removed.
2. Put cooked tomatillos, cilantro, garlic, onion, Serrano peppers, and salt in a blender or food processor. Mix until the consistency is smooth.
3. In a pan, heat olive oil on medium heat. Add the blended tomatillo mixture and cook for about 4 to 5 minutes.
Other Ways To Eat Tomatillo Enchilada Sauce
Aside from using this sauce as a topping for your enchiladas, it can be a great dip for grilled vegetables too. If you don’t want it to be too spicy, there’s an easy fix for that. The seeds on the Serrano peppers can be removed.
To have a roasted variation of the same recipe, the tomatillos can be roasted in the oven at 350 degrees F on a baking sheet that is lightly greased by olive oil.
This recipe can yield 3 to 4 servings, which has approximately 50 calories. The sauce is perfect for both vegans and vegetarians.
